I absolutely love this pot! Not only is it beautiful it cooks evenly, browns food wonderfully and leaves a nice fond in the bottom of the pan. A bargain for the serious cook, or those that just want a superior pot for braising, roasting and stewing.

Product Description:
"Cocotte" in French means "casserole," but there are plenty of dishes that emerge delectably from this cast-iron French oven. Staub celebrates one of the most traditional French recipes - coq au vin, or chicken in wine - with a special version of its classic 6-quart cocotte. Released in an array of rich colors, this limited-edition piece comes topped by a gracefully sculpted, stainless-steel rooster - the "coq." Although the cocotte cooks up a perfect coq au vin, it's also an ideal choice for slow-cooked stews and soups, casseroles, and roasted chicken, as well as many other one-pot meals. Measuring 12 inches in diameter, the cocotte is constructed of durable cast iron with a black matte enameled interior and an enameled ceramic finish that extends to the pot and lid edges to prevent chipping. And with its decorative design, it serves as beautifully as it cooks.
Designed for oven or stovetop use, the cocotte features a smooth, heavy earthenware base that will never warp and can handle any cooking surface, including glass, induction, and convection. As with the pot itself, the handles and lid are cast iron (handles and lid knob do get hot, so use caution) for durability and even heat distribution and retention. The lid features self-basting spikes to continually redistribute juices back to the ingredients as they cook. The cast-iron cocotte doesn't need seasoning and, as cooking oils seep into the pores over time, will become self-seasoning. Oven-safe to 500

I have been thrilled with the heft and quality of the Le Creuset poterie line - and this is no exception. After years of trial and error I have found this to be the perfect pan for my lasagna. I like to make BIG batches of lasagna, and this pan lets me feed an army. The color and finish are flawless and that famous Le Creuset non-stick ability is in full force here. Even after baking a big lasagna in it, washing this thing by hand is a piece of cake!

So, to sum up: Its large, it looks great, it cooks evenly, and it is very easy to clean after use. All of that for a pretty good price too! Highly recommended!

Le Creuset Enameled Cast-Iron 9-3/4-Inch Square Roast/Bake Pan, Dune Review

Le Creuset Enameled Cast-Iron 9-3/4 inch Square Roast/Bake Pan, Dune
Average Reviews:

(More customer reviews)
Le Creuset; a mainstay of French chefs; manufactures porcelain vitreous enameled cast iron cooking vessels as well as stoneware, silicone, and other quality products. This square pan is cast from molten iron formed in sand moulds which are used only once. For this reason, one pan may look like another, but each is unique in its own way.

As a highly efficient material, cast iron absorbs and distributes heat evenly. For this reason, it is recommended to use on low to medium heat. There are a few exceptions like boiling water where cooking on high heat is appropriate and okay. Otherwise, cooking with high temperatures may cause food to stick, discolor the enamel coating, or cook the food unevenly. Remove cast iron from the heat and it does not cool off quickly. This helps your food stay warm while serving. Beware; iron tends to be heavy so these cooking vessels tend to be heavier than the typical baking pan.

Cast iron is an effective material for cooking so why cover it with enamel? Iron tends to rust; iron oxide (rust) doesn't add any complimentary flavors to your food. If your cast iron cooking vessel was not enameled, you would have to season and maintain it. Adding the porcelain enamel not only looks good, but has multiple benefits. The enamel, being a solid coating, is one of the most hygienic surfaces to cook on, does not stain, absorb odors, retain flavors, and is easy to clean. The enamel can be damaged, so limit cooking tools to plastic or wood.Currently this pan is offered in four different colors; Flame, Cherry, Dune, and Cobalt.

The benefits of cooking with Le Creuset cast iron are many, but lets get down to the roasting pan specifically. This pan holds 3 quarts of food, measures 9 3/4 x 9 3/4 x 2 inches internally, and weighs 7 pounds. 3 quarts will typically feed 4-6 people when it comes to casseroles, so consider your recipes when determining the size you need.If you need a larger pan, the rectangular roasters may be the better option.Except for roasts, the roasting pan tends to do best if at least 3/4 full. Any less and you may overwhelm your food with heat evenly dispersed in the pot.

I find that the cast iron adds a crispy texture to food that may be desirable with a dish like mac-n-cheese, while not so desirable for other dishes. Some other possibilities for this pan include casseroles, deep dish pizza, pork chops covered with cornbread dressing, dinner rolls, baked squash, lasagna, scalloped potatoes, cobblers, pineapple upside down cake, or bread pudding. The possibilities almost seem endless to your imagination.

One feature that people tend to complain about is the cost. The cost does seem steep compared to other pans made from other materials. Heck, cast iron doesn't seem like it should be expensive when comparing to that old cast iron pan past generations have used for cornbread and camping. However the manufacturing process requires making a mould for each and every pan produced. They then go through the enameling process before shipping these heavy pans. If you take what goes into making and distributing these high quality cast iron products, the cost tends to make sense. Then consider that this pan will easily last a lifetime when taken care of.

PROS:
Extremely versatile
Efficient absorption and distribution of heat
Hygienic enamel cooking surface
Does not stain, absorb odors, or retain flavors
Easy to clean when not abused or misused
Can be transferred from stove top to the oven to the table
Can easily last a lifetime

CONS:
Its heavy, as cast iron tends to be weighing in at about 7 pounds.

Le Creuset Enameled Cast-Iron 9-1/2-Quart Oval French Ovens Review

Le Creuset Enameled Cast-Iron 9-1/2-Quart Oval French Ovens
Average Reviews:

I love this it is indispensable for entertaining. I make huge batches of stew in this and freeze them in portions. It heats wonderfully. Like any of their stuff it takes a long while for it to heat up but when it does it keeps its heat.
Word of warning don't use metal spoons or it will scrape the bottom. The cleaner that you can buy for it is a must and it brings it up beautifully.
Also it is very heavy especially when full and it does require a bit of strength to move it from oven etc.

this size is great if you entertain a lot or make batches of things. I use this size the most and I have a few of different sizes.

I didn't pay this price, though its not a bad one, I go to an outlet store to the le creuset store, get one slightly imperfect then wait for a sale.

We were reluctant to spend the money on this french oven but it was worth every penny. It heats up evenly and browns meat beautifully. We use this 5qt. french oven to make great one pot meals (4 servings).Just last night we made braised short ribs that were mouthwatering. We often use this pan on the stove for browning or searing and then transfer the dish to the oven for further cooking.Other times we use it for slow cooking on the stove.Clean up with the pan is super easy.Everything just wipes right out.The pan is really heavy but that's what makes it cook so well.My wife used to hate to cook (I used to be the only cooking enthusiast in the family) but she loves this french oven because all her recipes come out tasting so good.

Staub Rectangular Roasting Dish, 15 Inch x 9 7/8 Inch, Black

This pan is HEAVY enameled cast iron so it cleans like a dream! This is so thick and heavy that it won't bow or buckle under the largest roasts. What truly makes this unique is that it can be used on the STOVETOP!You can safely use this on an induction stove (or gas), then put it in the oven, under the broiler, and back to the stovetop to make a sauce. It looks really funny cooking with a pan like this on the stovetop, but since it distributes heat so well I don't have any hot spots if the burner doesn't fit.

Dishes that burn in other pans cook perfectly in all of my Staub. This is a great multipurpose pan which is the perfect size for a large chicken or standard cake.

The roaster looks very basic without any logos or bright colors, but this is a piece that is bought for function. If not dropped, it should last a lifetime.

Le Creuset Enameled Cast-Iron 7-1/4-Quart Round French Ovens Review

Le Creuset Enameled Cast-Iron 7-1/4-Quart Round French Ovens
Average Reviews:

(More customer reviews)
Just want to let you all know that the lid of this 4-1/2 quart pan also fits the 9-1/2" inch Tarte Tatin/Anniversary pan ...

In addition to buying this 4-1/2" round oven, I wanted to buy a small Buffet Casserole (the 2-quart size) to cook chicken & rice or pork chops when it's just my husband and myself, but I decided to buy the Tarte Tatin/"Anniversary" pan (same pan, two different names) instead for two reasons:

1) One less lid in the cupboard
2) I thought the shape of the anniversary pan's flat bottom would be a little bit more useful. I can make Tarte Tatin of course, but also regular cakes (come out delicious, just line this pan with parchment paper -- the cake comes out so perfect you may throw away your cake pans to make space for more Le Creuset cookware, lol), quiche, one pot breakfasts, etc.

Because the lid of this 4-1/2" oven fits on top of the anniversary pan, I can also use that anniversary pan to cook dishes with rice in them, poach chicken breasts, etc.

Of course, read all the other reviews about this 4-1/2 quart size pan. It's the perfect size pan to cook meals for 6 people.

FYI: If you are trying to decide what size to buy, just to let you know Le Creuset recommends that you choose a pan size where the contents of what you are trying to cook fills the pan at least 50%, if not three-quarters of the way full to the top, to make the most of the radiant heat qualities of cast iron (with this cast iron pan, the heat not only travels through the bottom of the pan, but also up the sides -- very different from your usual stainless steal or aluminum pan, which is why you use lower heat with these pans than with stainless steel pans).

If you use too large of a pan, your ingredients may dry out before they are cooked all the way through. Also, if you are cooking rice, if there is too much space at the top (if your pan is only 25 percent full), you may not get enough steam pressure to cook the rice all the way through.

If this is your first Le Creuset purchase, buy the size of pan you'll use most of the time, not the size you use when you cook for company. These pans are so addictive, you'll can always buy the bigger size later for specialty recipes.

This 4-1/2 quart is perfect for cooking for 3 to 6 people.

The 3-1/2 quart is perfect for 2 to 4 people.

The 2-1/2 quart is good for 1 or 2 people, or rice for 4 people.

I bought this pan off of Amazon through Chef's Resource a few weeks ago.I have made several things in it and all have turned out wonderfully.Once again, a great product from Le Creuset!
The only caveatI have is that this pan is not stoneware as described.I assumed this when I saw it on Amazon due to the hefty price. I contacted Amazon.com by phone and found them to be polite, but not too helpful.I later contacted Chef's Resource, who was offering the pan on Amazon at the time, and they assured me that the pan was indeed cast iron. I hope that Amazon will make the correction in the title and description of this product.I would not pay this price for stoneware, but the cast iron is well worth it!

Product Description:
For recipes that call for a crisp topping, this classic au gratin dish provides a wide, shallow cooking area that offers more exposure to heat, while its cast-iron construction makes it useful for everything from deglazing to baking. The oval-shaped dish, which measures 14-1/4 inches long and holds up to 3 quarts, makes it easy to beautifully present delicious potatoes au gratin as a side for dinner or bubbling fruit cobbler for dessert.
Like other pieces in Le Creuset's line of enameled cast iron, the cookware's exterior features a colorful, long-lasting enamel that resists chipping and cracking, while its durable, nonreactive sand-colored enamel interior offers a smooth surface for cooking and an optimal palette for food presentation. As cast iron is unexcelled for even heat distribution and superior heat retention, and enamel is impervious to acids and odors, the dish cooks food uniformly and gently without hot spots and can be used for marinating, cooking on the stovetop, or finishing in the oven. The cookware also provides traditional scalloped side handles for a secure grip, and it can be safely used at any oven temperature, under the broiler, and on any stovetop, including induction. Best of all, it moves gracefully from the oven to the table for serving to the refrigerator or freezer for storing leftovers. The cookware carries a lifetime limited warranty and should be hand washed for best results.

Le Creuset Enameled Cast-Iron 8-by-11-3/4-Inch Rectangular Baking Dish, Cobalt Blue Review

Le Creuset Enameled Cast-Iron 8-by-11-3/4 inch Rectangular Baking Dish, Cobalt Blue
Average Reviews:

(More customer reviews)
As a classically trained chef, I have an extensive collection of kitchen items not always found in a typical home. I tend to think of kitchen products from a professional point of view, although I enjoy many items made for home use. Le Creuset is uncommon in professionally kitchens; however they manufacture quality and effective products.

Le Creuset's porcelain enameled cast iron cooking vessels are cast from molten iron formed in single use sand moulds. Covering cast iron with porcelain enamel not only looks good, but has multiple benefits. The enamel, being a solid coating, is one of the most hygienic surfaces to cook on, does not stain, absorb odors, retain flavors, and is easy to clean eliminating the need for seasoning and preventing rust issues. Limit cooking tools to plastic or wood to prevent damaging the enamel.

Cast iron is a highly efficient material which absorbs and distributes heat efficiently. For this reason, it is recommended to use on low to medium heat. There are a few exceptions like boiling water where cooking on high heat is appropriate and okay. Otherwise, cooking with high heat may cause food to stick, discolor the enamel coating, or unevenly cook the food. Cast iron also retains heat, keeping food warm while serving.

This pan holds 2 1/2 quarts of food, measures 7 3/4 x 11 1/4 x 2 inches internally, and weighs 6 pounds 10 ounces. 2 1/2 quarts will typically feed 4 - 6 people when it comes to casseroles, consider the larger roaster to feed more. Except for roasts, the roasting pan tends to do best if at least 3/4 full. Any less and you may overwhelm your food with the pan's evenly dispersed heat.

Two features people tend to complain about are the cost and weight. The cost seems steep compared to common pans made from other materials. Compare to quality cookware, and the cost may seem more reasonable. When comparing to the old cast iron pans past generations have used for cornbread and camping, Le Creuset seems expensive. However the manufacturing process requires making a mould for each and every pan produced. They then go through the enameling process before shipping these heavy pans. If you take what goes into making and distributing these high quality cast iron products, the cost tends to make sense. Then consider this pan will easily last a lifetime when taken care of. Additionally cast iron is a heavy material. The enamel doesn't add much to the weight, when comparing to a similar cast iron product, the weight is going to be comparable.

I find the many benefits of Le Creuset make this pan a worthy purchase. This pan adds a desirable crispy texture to dishes like mac-n-cheese. Add a roasting rack and this pan is perfect for roasting chickens. The enamel is attractive, while the cast iron keeps the food warm for serving. Cleaning and caring for this dishwasher safe pan is easy. When properly taken care of, this pan will last a lifetime.

Knowing the benefits and the pleasure I get from using Le Creuset, I don't hesitate to recommend this pan. If you choose to purchase this pan, and use it for its strengths you won't be disappointed.

PROS:
Efficient heat absorption and distribution
Hygienic enamel cooking surface
Does not stain, absorb odors, or retain flavors
Easy to clean when not abused or misused
Can be transferred from stove top to the oven to the table
Dishwasher safe
Can easily last a lifetime

CONS:
Its heavy, as cast iron tends to be, weighing 6 pounds 10 ounces

Staub 5 Quart Oval Cocotte, Black Review

Staub 5 Quart Oval Cocotte, Black
Average Reviews:

(More customer reviews)
I own the predecessor of this Staub pot, the same model but with a domed lid. I received it as a gift a couple of years ago. I am a serious cook-- have taken some culinary classes and enjoy cooking immensely. This pot is quite simply the best roasting pot I have ever owned. It is a very heavy cast iron pot which has been double coated with enamel. The lid and pot fit together perfectly. The craftsmanship is excellent. There are dots protruding from the inside of the lid that essentially channel condensed moisture (steam) back down as liquid onto whatever you're cooking-- sort of creating your own little rainforest in the oven. (You can also use the pot without the lid if you prefer dry heat.)

The design of the lid ensures moist cooking, which tenderizes meats. Cooking a whole chicken (and this pot easily accommodates a very large roaster) with spices and vegetables results in fall-off-the-bone moist, flavorful meat. Cooking a roast of beef or pork? Ditto-- the meat is tender, and the spices are roasted in. Vegetables more your style? This baby makes perfect stews, either on a stovetop or baked.

Best of all, if you season your pot correctly before you use it (instructions are provided), cleanup is a breeze. Just fill the pot with warm soapy water for 15-30 minutes and then wash with a nonabrasive utensil (so as not to scratch the enamel). Even the worst baked on sauces come off easily. Love it.

One word of caution: cutting anything with a sharp knife in your pot may ruin the enamel coating. It's okay to slice into something to test it as long as the knife tip doesn't hit the bottom or sides of the pot. To me, this slight trade-off of convenience is well worth it, given how well the pot works.

I got a deal on this monster a few years ago and bought it even though I thought it was way bigger than I would ever need. WRONG! It has become one of the most used items in my kitchen. Large batches of soups or sauces are never a problem, and any extra room just keeps things cleaner due to reduced splash. As cast iron is unexcelled for even heat distribution and superior heat retention, and enamel is impervious to acids and odors, the oven browns and cooks food uniformly and gently without hot spots and can be used for marinating, cooking on the stovetop, or finishing in the oven. Two loop cast-iron side handles help ensure a steady grip during transport--even when wearing bulky oven mitts, and the unit's secure-fitting lid locks in heat and moisture while cooking. The lid also comes fitted with a black phenolic knob that will withstand an oven's heat up to 350 degrees F. Beautiful enough for the table yet durable enough to outlive its lifetime limited warranty, the French oven can be safely used on any stovetop, including induction, and should be hand washed for best results.

First off, Le Creuset products in general are great! We must have about 10 - 15 pieces and the cast iron stuff cooks and cleans up great! The stock pot that we have is the only piece that isn't quite up to snuff and the grille pan is a bit hard to clean, but general I would highly recommend their products.Plus they look great too...
This pan, the rectangular baker is wonderful.Meats and Fish cook great! We use ours a lot for baking fish - Salmon,etc...Its uses are numerous! It works out great because it can get so hot and it can cooks so evenly. This stuff is expensive but worth it.We like the original "flame" pattern, I have a friend that has a twenty year old set that is still going strong!

Le Creuset Enameled Cast-Iron 15-3/4-by-10-3/4-Inch Rectangular Baking Dish, Cobalt Blue Review

Le Creuset Enameled Cast-Iron 15-3/4-by-10-3/4 inch Rectangular Baking Dish, Cobalt Blue

As a classically trained chef, I have an extensive collection of kitchen items not always found in a typical home. I tend to think of kitchen products from a professional point of view, although I enjoy many items made for home use. Le Creuset is uncommon in professionally kitchens; however they manufacture quality and effective products.

Le Creuset's porcelain enameled cast iron cooking vessels are cast from molten iron formed in single use sand moulds.Covering cast iron with porcelain enamel not only looks good, but has multiple benefits.

The benefits of cooking with Le Creuset cast iron are many, but let's get down to the roasting pan specifically. This pan holds 5 1/4 quarts of food, measures 9 3/4 x 14 x 3 inches internally, and weighs 10.2 pounds. 5 1/4 quarts will typically feed 8 - 10 people when it comes to casseroles, consider the rectangular baker for smaller recipes. Except for roasts, the roasting pan tends to do best if at least 3/4 full. Any less and you may overwhelm your food with the pan's evenly dispersed heat.

I find the many benefits of Le Creuset make this pan a worthy purchase. This pan adds a desirable crispy texture to dishes like mac-n-cheese.Add the Le Creuset 9 by 11-1/2 inch roasting rack for roasting chickens and pork loins keeping them out of the grease. Some other possibilities for this pan include casseroles, deep dish pizza, pork chops covered with cornbread dressing, dinner rolls, baked squash, lasagna, scalloped potatoes, cobblers, pineapple upside down cake, or bread pudding. The enamel is attractive, while the cast iron keeps the food warm for serving.Cleaning and caring for this dishwasher safe pan is easy. When properly taken care of, this pan will last a lifetime.

Knowing the benefits and the pleasure I get from using Le Creuset, I don't hesitate to recommend this pan.Purchase this pan and use it for its strengths, you won't be disappointed.

PROS:
Efficient absorption and distribution of heat
Hygienic enamel cooking surface
Does not stain, absorb odors, or retain flavors
Easy to clean when not abused or misused
Can be transferred from stove top to the oven to the table
Dishwasher safe
Can easily last a lifetime

CONS:
Its heavy, as cast iron tends to be weighing in at about 10.2 pounds
