This is so much fun to cook with.It cooks diced bacon beautifully, onions become translucent without worry of burnt or crispy edges, mushrooms brown perfectly, meat browns to a perfect, even golden crust...I've never seen meat brown so beautifully before - I'm really excited about this brasier and can't wait to purchase another piece of this line (I already have the 10x10 baking dish and it's wonderful, as well!).Oh, and deglazing was effortless with some wine and stock...I'm usually scraping away in my old "traditional" dutch oven (iron core, I believe?). I'm so happy with this purchase!
