(More customer reviews)I used Alton Brown's recipe from Good Eats for my turkey this Thanksgiving (which everyone should try) and it calls for roasting the bird for 30 minutes at 500 degrees. I have done this recipe for three years and have used three different pans. The first two pans said they were rated for 500 degrees but when all was said and done we had to throw them away because they were ruined. This pan was the complete opposite. After cooking the bird for 30 minutes at 500, then 2 hours at 350 and letting it sit for the rest of the day we thought we would have to use a lot of elbow grease to get the scum off the bottom. We were very relieved when we just poured in warm soapy water and the grease basically floated to the top. With very little pressure from the scrub brush the rest came off in no time. The only negative I would have for this pan is that the rack is not secure in the pan but that only mean you have be more careful moving the food around. I highly recommend this pan and I am getting it for anyone I know who is getting married (or already is). For the price you can't go wrong.
